C-200 Ultrasonic 8" Chef's Knife

C-200 Ultrasonic 8" Chef's Knife

The C-200 is the world’s first ultrasonic chef’s knife, designed specifically for home cooks. You can’t see the blade move, you can’t hear it when it’s on, and you can’t feel any vibration in the handle. But when you press the orange button, the knife cuts with up to 50% less effort, with less sticking, and easier cleanup. When it’s on, the blade vibrates over 30,000 times a second, making the knife behave sharper than it physically is. Made from Japanese AUS-10 steel hardened to 60HRC, it’s a great knife when it’s off, too.

Ultrasonics make the knife behave sharper

than it physically is, letting you cut with less effort and greater control. Ultrasonic action also makes the blade behave slicker than it is for better food release and cleaner cuts through soft and sticky foods.

  • Cut with ease

When the knife is on, it cuts with up to 50% less force. We measured... with a robot.

  • Japanese steel

It’s a great knife even when it’s off. The blade is made from Japanese AUS-10 stainless steel with good corrosion resistance and an exceptionally sharp edge.

  • Wireless charging

The solid mahogany charging tile (sold separately) contains its own battery and recharges your knife wirelessly.

The knife is IP65-rated for water resistance. Hand wash it in the sink, just like any other great knife.

No full tang? No worries.

The handle houses working electronics, so there's no room for a full tang. But don't sweat: we've engineered the bolster connection to withstand up to 50 lbs. of pushing force, so you can chop without worry. (Our human arms could only muster 30 lbs. This is why we're nice to the robot.)

The Wireless Charging Tile (sold separately) keeps your battery topped up so you’re always ready for action. The tile is milled from solid mahogany and keeps your blade edge protected when not in use. It can live on your counter, in a drawer, or wall-mounted with no cords and no drilling required.

Getting Started with the C-200

Customer Reviews

  • A wonderful addition to my kitchen

My chef's knife is wonderful to use, the ease of cutting and the accuracy really is a game changer. At first the knife seemed a little heavier but it is balanced very well for my small hand. I'm really enjoying this knife and it's been my "go to knife" for cooking. Just waiting for my impulse induction cooktop to arrive and I'll be very happy to cook.

  • First test

First test...how will it do cutting a fresh loaf of sourdough with a solid, hard crust? It does, like butter. Hard to believe how well it cuts. Love it.
    ★★★★ Bruce S. (verified buyer)

  • It works

I was worried the handle would be awkward but the knife feels very good in a pinch grip. The effect is variable between foods and does help in all cases some less than others.

    ★★★★ Peter B. (verified buyer)

  • Amazing knife!!

I like it a lot. It looks beautiful and works as expected. The blade itself arrived razor shaft and so far is maintaining its edge well. I do love the mirror finish. My only wish would be for it to have a movement sensor and not a button. I personally find it a bit awkward to keep the button pressed while cutting, particularly as the handle is quite thick. It would probably require a bigger battery and more parts (and expense), but I would definitely be interested in another sonic knife in the future if a reliable movement sensor was able to be incorporated without adding thickness to the handle.

Press

  • "The beauty of an ultrasonic blade like this is that it can handle everything your old cutlery is meant for, but with the touch of a button, it delivers sharpness unlike anything you've experienced before."

  • "Seattle Ultrasonics C-200 knife review: a powered knife even a pro chef can love. 4 out of 5 stars"

  • "I was skeptical, but I sliced through a tomato with almost no resistance at all — it felt like the knife was falling through."

  • "OMG this knife is incredible!!!!"

  • ”It might just be the best new product I’ve tried all year.”

  • "It could genuinely alter the course of the industry forever."

  • "…The knife feels almost nonstick, as the vibrations — created by PZT-8 piezoelectric ceramic crystals — keep food from clinging to the blade"

  • "From stubborn tomato skins to tough root vegetables, the C-200 aims to turn kitchen prep from physical work into effortless precision."

  • "While Heimendinger’s knife still features a great piece of sharp Japanese san mai AUS-10 steel, it’s the handle that does the heavy lifting, with electronics that produce more than 40,000 vibrations per second, making the knife behave sharper than it physically is."

  • "The Seattle Ultrasonics C-200 chef's knife is an ultra-advanced piece of equipment for at-home chefs to incorporate into their preparation routine that will greatly reduce their effort, while also increasing their cutting capabilities."

  • "Seattle Ultrasonics has designed the world's first ultrasonic chef's knife for home cooks, dubbed the C–200. …despite only being announced this week, the knife has already garnered huge attention on social media."

  • "The C-200 pairs traditional craftsmanship with ultrasonic technology for smoother, cleaner cuts."

SMOOTHER CUTS, LESS EFFORT

When this knife is on, ultrasonic energy vibrates the blade over 30,000 times per second. These vibrations – which can’t be seen, heard or felt in the handle– reduce friction, allowing for smoother cuts with less effort.

What generates the vibrations in the C-200?

The C-200 doesn't use any vibrating motors or magnets to generate its ultrasonic vibration. Instead, it uses PZT-8 piezoelectric ceramic crystals. This engineered ceramic material expands very slightly in one direction when an electric current is applied. In the C-200, these crystals make the blade resonate at ultrasonic frequency while directing energy into the blade rather than the handle.

Can you feel any vibration in the handle during use?

No - you won't feel the vibrations in your hand. Unlike, say, an electric toothbrush, the ultrasonic vibrations are not detectable in the handle and are isolated to the blade.

Is the battery removable?

Yes, the C-200's battery is user-removable. With the knife off and pointed away from you, grip the handle firmly with one hand while pulling the battery pack straight out to remove it.

Is an ultrasonic knife safe?

Yes. An ultrasonic knife isn't inherently more dangerous than any other sharp kitchen knife. You still have to be careful (it is a sharp blade!), but the C-200 can make cutting safer because you use less force and maintain more control than using a dull knife.

Will I still need to sharpen the C-200?

Yes — the C-200 has a conventional AUS-10 steel blade. Sharpen it the same way you'd sharpen any high-quality Japanese knife. Whetstones, fixed-angle sharpening systems, and rolling sharpeners are great. We don't recommend pull-through sharpeners or electric sharpeners, as they can be far too aggressive in removing material.

Also, keep the ultrasonics off when resharpening to avoid damaging the blade and your sharpening equipment.

Why no full tang?

The handle contains the battery, circuit board, and the working parts of a commercial ultrasonic food cutter — all miniaturized to fit a kitchen knife. So there's no room for a full tang. However, we poured significant engineering into the blade-handle connection to make sure it holds up to real kitchen use. How much force can the connection actually take? We attached the knife to a robotic arm and applied over 50 lbs. of downward force — more than two human arms can generate.

If you regularly split lobster shells or hack through frozen meat, keep a cleaver handy. For everything a chef's knife is designed to do, the structure is sound.

How long does the battery actually last in my kitchen?

More than 20 minutes of continuous ultrasonic operation. In practice, that covers most home cooking sessions — you're not pressing the button the whole time, just when you're actively cutting. For a typical weeknight dinner prep, most people use the ultrasonic function for 3–5 minutes total. If you keep the Wireless Charging Tile on your counter, the knife is essentially always charged. The tile holds enough charge to recharge the knife 8–10 times before the tile itself needs a charge.
