The knife is IP65-rated for water resistance. Hand wash it in the sink, just like any other great knife.

No full tang? No worries.

The handle houses working electronics, so there's no room for a full tang. But don't sweat: we've engineered the bolster connection to withstand up to 50 lbs. of pushing force, so you can chop without worry. (Our human arms could only muster 30 lbs. This is why we're nice to the robot.)

Assisted Sharpening, built in.

Even with ultrasonics, knife still works best when it’s also sharp. But re-sharpening any knife can be intimidating: do it wrong, and you can damage the edge and scratch the blade.

The C-200 features a built-in 6-axis angle and motion sensor. Paired with the Assisted Sharpening experience. you get live feedback to hold the right angle, measure your progress, and see your results. It's like a cheat code for great sharpening technique.

Getting Started with the C-200

SMOOTHER CUTS, LESS EFFORT

When this knife is on, ultrasonic energy vibrates the blade over 30,000 times per second. These vibrations – which can’t be seen, heard or felt in the handle– reduce friction, allowing for smoother cuts with less effort.

What about long-term reliability — electronics in a kitchen?

The knife is IP65-rated, meaning it's protected against sustained water jets from any direction. Rinse it under the tap. Wash it under running water. It's designed for kitchen conditions. That said, we'd steer you away from the dishwasher — not just for the electronics, but because high-heat dishwasher cycles are hard on any high-quality knife blade. The knife also comes with a 1-year warranty, so you can buy with confidence.

Why no full tang?

The handle contains the battery, circuit board, and the working parts of a commercial ultrasonic food cutter — all miniaturized to fit a kitchen knife. So there's no room for a full tang. However, we poured significant engineering into the blade-handle connection to make sure it holds up to real kitchen use. How much force can the connection actually take? We attached the knife to a robotic arm and applied over 50 lbs. of downward force — more than two human arms can generate. 

If you regularly split lobster shells or hack through frozen meat, keep a cleaver handy. For everything a chef's knife is designed to do, the structure is sound.

What generates the vibrations in the C-200?

The C-200 doesn't use any vibrating motors or magnets to generate its ultrasonic vibration. Instead, it uses PZT-8 piezoelectric ceramic crystals. This engineered ceramic material expands very slightly in one direction when an electric current is applied. In the C-200, these crystals make the blade resonate at ultrasonic frequency while directing energy into the blade rather than the handle.

Is an ultrasonic knife safe?

Yes. An ultrasonic knife isn't inherently more dangerous than any other sharp kitchen knife. You still have to be careful (it is a sharp blade!), but the C-200 can make cutting safer because you use less force and maintain more control than using a dull knife.

Can you feel any vibration in the handle during use?

No - you won't feel the vibrations in your hand. Unlike, say, an electric toothbrush, the ultrasonic vibrations are not detectable in the handle and are isolated to the blade.

How long does the battery actually last in my kitchen?

More than 20 minutes of continuous ultrasonic operation. In practice, that covers most home cooking sessions — you're not pressing the button the whole time, just when you're actively cutting. For a typical weeknight dinner prep, most people use the ultrasonic function for 3–5 minutes total. If you keep the Wireless Charging Tile on your counter, the knife is essentially always charged. The tile holds enough charge to recharge the knife 8–10 times before the tile itself needs a charge.

Is the battery removable?

Yes, the C-200's battery is user-removable. With the knife off and pointed away from you, grip the handle firmly with one hand while pulling the battery pack straight out to remove it.

Will I still need to sharpen the C-200?

Yes — the C-200 has a conventional AUS-10 steel blade. Sharpen it the same way you'd sharpen any high-quality Japanese knife. Whetstones, fixed-angle sharpening systems, and rolling sharpeners are great. We don't recommend pull-through sharpeners or electric sharpeners, as they can be far too aggressive in removing material. 

Also, keep the ultrasonics off when resharpening to avoid damaging the blade and your sharpening equipment.
