C-200 Ultrasonic 8" Chef's Knife

The C-200 is the world’s first ultrasonic chef’s knife, designed specifically for home cooks. You can’t see the blade move, you can’t hear it when it’s on, and you can’t feel any vibration in the handle. But when you press the orange button, the knife cuts with up to 50% less effort, with less sticking, and easier cleanup. When it’s on, the blade vibrates over 30,000 times a second, making the knife behave sharper than it physically is. Made from Japanese AUS-10 steel hardened to 60HRC, it’s a great knife when it’s off, too.

FAQ

What generates the vibrations in the C-200?

The C-200 doesn't use any vibrating motors or magnets to generate its ultrasonic vibration. Instead, it uses PZT-8 piezoelectric ceramic crystals. This engineered ceramic material expands very slightly in one direction when an electric current is applied. In the C-200, these crystals make the blade resonate at ultrasonic frequency while directing energy into the blade rather than the handle.

Can you feel any vibration in the handle during use?

No - you won't feel the vibrations in your hand. Unlike, say, an electric toothbrush, the ultrasonic vibrations are not detectable in the handle and are isolated to the blade.

Is the battery removable?

Yes, the C-200's battery is user-removable. With the knife off and pointed away from you, grip the handle firmly with one hand while pulling the battery pack straight out to remove it.

Is an ultrasonic knife safe?

Yes. An ultrasonic knife isn't inherently more dangerous than any other sharp kitchen knife. You still have to be careful (it is a sharp blade!), but the C-200 can make cutting safer because you use less force and maintain more control than using a dull knife.
